Hand-thumbed ear-shaped orecchiette with bitter turnip greens (cime di rapa), garlic, chili, and anchovy; cavatelli with mussels and white beans; or baked terracotta rice, potatoes, and mussels (tiella barese) (€8–€12). In southern Italy's sun-drenched climate around Turi, kitchens rely on cold-pressed extra-virgin olive oil, durum-wheat semolina pasta, wild oregano, capers, and wood-fired bread ovens.
