Bronze-die Gragnano paccheri or scialatielli tossed with sweet cherry tomatoes and clams, slow-simmered Sunday Neapolitan ragù, or hearty pasta e patate molten with smoked provola cheese in inland hill towns (€8–€13). In southern Italy's sun-drenched climate around Recale, kitchens rely on cold-pressed extra-virgin olive oil, durum-wheat semolina pasta, wild oregano, capers, and wood-fired bread ovens.
